Michizakura Brewery, which built a 143‑year history in Gifu, relocated to Higashikawa Town, Hokkaido, in 2020 and has since embarked on a new chapter as a rare public‑private‑operated sake brewery. The decisive factors behind the move were the pure spring water from the Daisetsuzan mountains that sustains local life and the town’s own sake rice. Under these blessed conditions, Sanchizakura’s sake achieves a soft, water‑clear clarity on the palate, combined with a lively, crisp finish. While honoring its history and craftsmanship, the brewery now focuses on expressing Higashikawa’s terroir — visitors are invited to experience this sake‑making process up close.
