Great taste begins with exceptional ingredients.
At COOZY JUICE STAND, we use rice grown locally in Asahikawa.
Carefully cultivated with underground water from Daisetsuzan, this rice is grown using organic-based fertilizers with minimal use of pesticides and chemical inputs 🌾
The water used in preparation is also pristine natural water flowing from Daisetsuzan. Embracing the power of nature, each batch is crafted in an environment ideal for koji fermentation.

Handcrafted Story from the Workshop

In the koji-making room behind the shop, rice koji is carefully cultivated over approximately 50 hours, with precise control of temperature and humidity.
Not by machines, but by the careful hands of artisans—watching over each grain as it gently undergoes natural fermentation.
Crafted to be enjoyed just as it is, with minimal off-flavors—its characteristic koji notes are gently refined into a smooth, delicate sweetness.
Serving only freshly made “raw” koji juice to our guests.
