The soba noodles they are proud of are made with buckwheat flour from Horokanai (such as Etanbetsu depending on the time of year), which boasts the largest production volume of soba noodles in Japan, and is hand-made by craftsmen in the store every day.
The noodles, which are made with a focus on “freshly ground, beaten, and boiled,” are fragrant, chewy, and have been praised by word of mouth for their excellent texture.
And along with the delicious soba noodles, the most popular is the “tempura” that shines with the skills of the craftsman.
Since it is a Japanese restaurant in an inn, it is said that the batter that is fried after receiving an order is crispy and light, and the sweetness of the ingredients is trapped.
