The essence of Umekoken lies in its original style of combining an animal-based soup based on pork bones and chicken bones, and a seafood-based soup carefully made from dried sardines and kelp in a bowl.
This creates a complex and deep taste that harmonizes the powerful richness of animal and the delicate flavors of seafood without erasing each other’s goodness.
Pairing this finished soup with custom-made medium-thin curly noodles. Not only does the soup intertwine well, but the wheat flavor is also strong.
